|400g||Cook Italian/Cook Italia Spaghetti|
|2 tablespoons||Olive Oil|
|25g||Cook Italian/Cook Italia Grated Italian Cheese|
|A pinch||Salt and Black Pepper|
Cook the Spaghetti in a large pan of boiling water, with a pinch of salt, for 8 to 10 minutes.
Meanwhile, heat the Olive Oil in a pan on a medium heat. Add the pancetta and fry, stirring occasionally, until it’s crisp and golden, then drain off any excess fat from the pan. Leave the pancetta in the pan but remove it from the heat.
Whisk the eggs and Cheese together in a bowl, and season with black pepper.
When the Spaghetti is how you like it – ‘al dente’ or a little softer – drain off all the water, and tip the fried pancetta into the pan with the Spaghetti.
Keeping the pan off the heat, add the beaten eggs, mix quickly and thoroughly then cover the pan with a lid for 90 seconds.
Serve immediately with black pepper and a sprinkling of Grated Italian Cheese for a final flourish.
